Ingredients

  • 1 can chickpeas (15 oz), drained and rinsed

  • 3/4 cup organic creamy peanut butter (can sub almond, cashew, or sunflower seed butter)

  • 1/3 cup pure maple syrup
    ‍
  • 1/4 cup oat flour
    ‍
  • 2 tsp vanilla extract
    ‍
  • 1 tsp baking powder
    ‍
  • 1/4 tsp sea salt
    ‍
  • 1/2 cup dark chocolate chips
    ‍
  • Optional topping: flaky salt
  • 1 can chickpeas (400 g), drained and rinsed

  • 180 g organic creamy peanut butter (can sub almond, cashew, or sunflower seed butter)

  • 80 ml pure maple syrup
    ‍
  • 30 g oat flour
    ‍
  • 2 tsp vanilla extract
    ‍
  • 1 tsp baking powder
    ‍
  • 1/4 tsp sea salt
    ‍
  • 90 g dark chocolate chips
    ‍
  • Optional topping: flaky salt
  • Steps

  • Preheat Oven: Preheat your oven to 350Β°F (175Β°C).
    ‍
  • Blend Ingredients: In a food processor, combine all ingredients except the chocolate chips. Process until the mixture is smooth.

  • Add Chocolate Chips: Transfer the mixture to a bowl and stir in the chocolate chips.
    ‍
  • Shape Cookies: Roll the mixture into balls and place them on a parchment-lined baking sheet. Flatten each ball into a round cookie shape. Wet your hands or use meal prep gloves to prevent sticking.

  • Bake: Bake in the preheated oven for 12-14 minutes.

  • Cool and Serve: Allow the cookies to cool on the baking sheet before enjoying. Sprinkle with flaky salt if desired.
