Almond-Date Crumble:
- 30 g blanched almonds
β - 30 g rolled oats
β - 2 medjool dates, pitted
β - 15 g unsweetened shredded coconut
β - Pinch of salt
Steps
Prepare the Strawberry Chia Pudding:
- In a blender, combine the plant-based milk, yogurt, strawberries, maple syrup, vanilla extract, and a pinch of salt. Blend until smooth.
β - Transfer the blended mixture to a bowl and stir in the chia seeds. Mix thoroughly to ensure the seeds are evenly distributed.
β - Let the mixture sit for 5 minutes, then stir again to prevent clumping. Cover and refrigerate for at least 1 hour, or overnight for best results.
β
- In a food processor, combine the blanched almonds, rolled oats, medjool dates, shredded coconut, and a pinch of salt. Pulse until the mixture reaches a crumbly texture. Be careful not to over-process; you want a coarse crumble, not a paste.
β
- Once the chia pudding has set, give it a good stir.
β - In serving glasses or bowls, layer the chia pudding and almond-date crumble as desired. For example, start with a layer of chia pudding, followed by a sprinkle of crumble, and repeat.
β - Top with additional sliced strawberries or a drizzle of maple syrup if desired.
β
- Enjoy immediately or store in the refrigerator for up to 3 days.
Enjoy !
