You're not going to believe this simple, healthy and delicious vanilla ice cream made from chickpeas. You're NEVER going to buy fatty and unhealthy store bought vanilla ice cream again!

Ingredients

  • 1 (15 oz) can chickpeas (or 1 ½ cups cooked chickpeas)
  • 10 soft dates, pitted
  • ½ cup almond butter
  • ½ cup plant-based milk
  • 1 vanilla bean
  • 1 (400 g) can chickpeas (or 250 g cooked chickpeas)
  • 10 soft dates, pitted
  • 150 g almond butter
  • 120 ml plant-based milk
  • 1 vanilla bean
  • Steps

  • Prepare Ingredients: Rinse and drain the chickpeas if using canned. Pit the dates if not already done.
  • Blend Base: In a high-speed blender, combine the chickpeas, dates, almond butter, plant-based milk, and the seeds scraped from the vanilla bean.
  • Blend Until Smooth: Blend until the mixture is completely smooth and creamy.
  • Freeze: Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. Alternatively, you can pour it into a container and freeze, stirring every 30 minutes until it reaches the desired consistency.
