You're not going to believe this simple, healthy and delicious vanilla ice cream made from chickpeas. You're NEVER going to buy fatty and unhealthy store bought vanilla ice cream again!
Prepare Ingredients: Rinse and drain the chickpeas if using canned. Pit the dates if not already done.
Blend Base: In a high-speed blender, combine the chickpeas, dates, almond butter, plant-based milk, and the seeds scraped from the vanilla bean.
Blend Until Smooth: Blend until the mixture is completely smooth and creamy.
Freeze: Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. Alternatively, you can pour it into a container and freeze, stirring every 30 minutes until it reaches the desired consistency.
