- Prepare Skewers: Put the zucchini pieces on the skewers. Each skewer should have around 4-5 pieces.
- Make Sauce: Mix soy sauce, date syrup, vegan oyster sauce, sriracha, white miso, and rice vinegar in a small bowl.
- Grill Zucchini: Add the skewers to a grill or cast iron pan over medium-high heat and sear on all sides.
- Glaze Zucchini: Pour the sauce over the seared zucchini on the grill or pan. Sear on each side for another 1 minute, or until desired crispness.
